Since I think people should listen to contemporary composers, I'll suggest John Adams' "El Niño" on Nonesuch, essentially a modern Christmas cantata.
On the Christmas carol side, Maddy Prior recorded 2 discs of carols with the Carnival Band on Saydisc, "A Tapestry of Carols" and "Carols and Capers". The first disc is more the treaditional religious carols while the second disc includes a greater proportion of secular Christmas music. The style of performance is similar to their disc of Wesleyan and related hymns, "Sing Lustily & With Good Courage" which is also worth a listen. Good singalong material.
