the 20th Century's latin song blockbuster - Carl Orff's 'Carmina Burana' or the original songs from the middle ages that prompted it, which used to be available in a performance by Thomas Brinkley. In a similar vein to the Brinkleym there's a "Mass of Fools" performed by the Berry Hayward Consort and others which is also fun.We should also mention the pin-up girl of the middle ages, or rather the 20th Century's middle ages pin-up girl, Hildergard of Bingen.
And there's a very nice St Anthony Mass by Lou Harrison, available on Koch in a coupling with Arvo Part's Berlin Mass.
I also forgot to mention that the Einhorn "Voices of Light" which you mentioned is quite a nice work that probably deserves a bit more publicity, but I really don't think Joan had sufficient multiple personalities to warrant allocating her part to the Anonymous 4 :-)
