But your "only two ears" argument doesn't make sense either.
In the real world, how is it that we can tell the directionality of the sound sources we hear? How do we know that certain sounds are behind us, or above us? Your simple "two ear" theory can't account for that. Can you honestly say that you've had the sensation of sounds coming from behind you while listening to 2Ch recordings. With 5Ch or immersive recordings, that sensation happens all the time. And it's not just ambient sounds either: some works, such as the Canzoni of Giovanni Gabrieli and the Berlioz Requiem require that some performers be placed at the rear of the hall.
And if you think that 2Ch recordings are not mixed and tweaked, just as 5Ch or immersive recordings are mixed and tweaked, I think you're rather naive. When you listen to a stereo recording, everything is in front of you. Is that realism? Only to a limited extent. When you're in a concert hall, sound reflections from the hall emanate from behind you, from above you, and from the sides. How do you propose to capture those realistic reflections which you would be hearing in a live concert? The fact is, you can't when all the sound you're hearing from a stereo recording is originating from in front of you.
BTW, when I listen to immersive recordings in LOSSY Dolby Atmos via Apple Music streams, sure, I might be missing some bits here and there. But when you restrict yourself to 2Ch, you're missing more than half the original sound field itself. But even on this point, I don't need to restrict myself to Apple's lossy Dolby Atmos streams, because I can listen to LOSSLESS Dolby Atmos via blu-ray or lossless immersive downloads. So at least I know what I'm talking about. How 'bout you?
