It's done all the time especially in automotive.
"I've seen CR2032 batteries in series but never in parallel. That's not to say it can't be done." Two batteries paralleled doubles the current capability, in series doubles the voltage. See link
"In theory one possible problem is mating batteries with identical charge. If one battery is lower than the others it will draw current from the higher charged batteries." Two batteries connected will equalize the charge in both. If they are not of equal voltage charge the higher charge battery will decrease to the same as the lower and vise versa.
