I've seen CR2032 batteries in series but never in parallel. That's not to say it can't be done.

In theory one possible problem is mating batteries with identical charge. If one battery is lower than the others it will draw current from the higher charged batteries. There are ways to isolate them with diodes or FETs but now you're wasting power..... and CR2032 aren't exactly powerful to begin with.

In practice, it's probably fine for a hobby project but I'd be more cautious and do more research if it's for a consumer product where liability can be a concern.
