A first rate musician will know when they are playing in the right key, or at the very least be consistent throughout a performance. My wife could learn an entire Mozart, Schubert, or Beethoven sonata from hearing a recording one or two times and then could sit down and play it, transposing it to any desired key on the fly if asked. At a party she sat down at the keyboard and played one of the Bach orchestral suites. When a guest asked who had done the transcription she explained that there was no transcription, she was just making it up on the fly. She had perfect pitch and at one concert as a teenager she transposed a Mozart piano sonata on the fly when she discovered that the piano had been mistuned.
