RE: Why is surround sound not "high end"?

Actually, it goes completely in the opposite direction. :-)

In theory, you need an infinite number of mono-stereo mic pairs, arranged on a surface, to record an entire three-dimensional sound field with no bandwidth limitation.

In practice, you can get by with less, but this isn't a case of more being less, it's a case of less being more. It's very different than multimiking in that regard, in which more is less.

However, multimiking may yet come into its own. Since it's now possible to emulate a concert hall, and since it's impractical to transmit enough channels for real wave field synthesis (arrays of microphones and speakers), what you want to do is record the individual source instruments and then send them along with a location vector. Then the output to the speakers can be calculated in real time during playback. This is already being done with WFS to a limited degree, and also Dolby Atmos uses it for surround (but not I think a WFS approach) with 128 channels and 64 speakers.

By the way, convolving reverb is neither expensive nor iffy. You can download various apps and do it on your own computer. In that sense, it's very different from something like high resolution wave field synthesis that's still impractical (Ambisonics is wave field synthesis, but without enough mics and speakers).

Also, you mentioned the Carver Sonic Hologram -- you can download lots of crosstalk cancellation apps that do a better job than Carver could with the technology then available. Just to confuse things, that's called "Ambiophonics." Ambiophonics can be used with convolving reverb for a super convincing surround system, but if you look at some of these systems, they're so elaborate as to be impractical for most. Whatever is ultimately done is going to have to have some regard for limited wallets and WAF!
