I made a similar transition. I was very impressed with the old black and white screen iPod Classic. I think mine was 40 or 60GB. I later bought the color screen 120GB iPod Classic. I also own an early model iPod Touch with only 16GB of capacity but I use it daily as a Remote Control for my Mac Mini music server.
I didn't switch to Mac until my company gave me a MacBook Pro laptop as my work computer. I resisted but finally opened my mind to learning it rather than cursing it. It's a different experience than Windows and I have to say that I now like it a LOT more. The upside is that it has also been significantly more reliable (from an operating system / software) perspective than any of our Windows PCs.
And yes, music from the iTunes store at 256kbps AAC is reasonably good. I have a few purchased tunes and a bunch of music videos bought from the iTunes Store. However, a home ripped CD to Apple Lossless format sounds better and rivals a good CD through a quality CD player.
