I assume you mean importing CDs, which allows you to choose your settings, rather than downloading from the Apple Music Store, which does notFrom the Edit menu - Preferences - Advanced tab - Importing - Import using, then the drop list to choose encoding method (AAC or Lossless or whatever). If using AAC, then select Setting - Custom, then choose preferred bit rate
If you plan to use this primarily for portable listening as opposed to connecting it to a home stereo, it's worth experimenting with AAC at a higher bitrate (256 or 320) versus lossless. Depending on your headphones, you may not hear a worthwhile difference.
Your next step is to get a good set of headphones. The Apple earbuds are crap. I use the Etymotic ER-4 earphones, lots of people also like the Shure lineup (E-2, E-3, etc), both give excellent isolation.
