It's interesting that I am sharing a very similar path to yours. I suspect that many older enthusiasts will have a similar journey.
It's a big change for many to realise that digital 1s and 0s are basically perfect and that worrying about your HiFi front end is becoming, almost, redundant. Yes there are a bunch of different audio specifications out there (AAC, MP3, Ogg, FLAC,...) which make a difference but you simply chose the one where you can no longer hear any improvement with your electronics and your ears.
The Bluesound turned up today and is working away indexing my audio files on the RAID NAS. I've just connected it to the ML383 by RCA and like you suspect that the ML39 DAC will only deal with Red Book standard. Will be trying out some free subscriptions to streaming services over the next few days and will attempt to put them through the ML39 DAC at some point.
Not sure I will ever get rid of my original media and will need a way to play the CDs and vinyl but I grudgingly need to admit that I have barely touched a CD since I ripped them all.
Getting a laptop out to rip things felt too much like day to day work whereas using a dedicated ripping device like the Naim doesn't. The Naim also just worked. There was no faff.
The NAD ecosystem looks to do all and more of what I need. I'm looking forward to getting out and auditioning things.
Thanks for your help
