Ethernet cables come in a variety of configurations
Many with out any shield
The 10BASE## cables are coaxial, and have a shield, though are not the current SOTA for new systems
The Cat 5, 5e and 6 cables are variations on a 4 pair wire bundle where each pair is individually twisted. These configurations have no shield that is a conductor.
An optical cables do not have a signal or electrical shield.
So, not quite sure what you are looking for...
