Hi.What you just said is an everyday business for us tube DIYers.
Of course, I don't mean we handle "3000 volts" project so often.As long as all wires & cables with insulation/jacket are rated for the right HV & large current application, there is no harm of touching them. I hope you are not so naive to assume the wires & cables we are using to hook up speakers & HV from the O/P transformer to the tube plates were all bare & uninsulated.
So what would be the "many problems" then. Want to enlighten me?
