instead of drinking water. Water was known to be unsafe to drink in olden time urbanized areas, though they knew not why. Fermenting destroys harmful bacteria, has some nourishment, is cheap and easy to produce. I was friended a fascinating book on the impact on history of beer, wine, spirits, cola, coffee, and tea--- a fascinating read and a must for history buffs.
