In digital, most every effect imaginable is available in post-capture software. It's very easy and allows quick image capture. By far, the most predominate procedure.
The other school, with a far smaller following, are those who try to set up the initial capture with as much desired filter effect as possible -- carryover from film days. This can be as simple as using grad filters on lenses, to doing dodging/burning with a piece of cardboard waving in front of the lens (and watching the image in the lcd on the camera back). The purists claim that they get more clarity and a better image for their troubles.
Pick up the latest issue of Outdoor Photographer. It has a featured interview with a guy taking amazing images of lava flows in HI -- a subject that taxes any image capture. He's nuts, but is a great example of the capture manipulation group.
