RE: You should have plenty of gain

Thanks for the suggestions. I'm leaning toward the use of low-power opamps now instead of the FETs. Some consume less than half a milliamp, and the gain would be easy to adjust. A Zener-biased 12AU7 could easily power this, and a dual opamp would fit on a PCB the size of a postage stamp. This is probably a better way forward, and it won't require additional holes if the 12AT7 I'm starting with doesn't have enough gain.
