You can, but the conversion is considerably more involved than just to change a few components.

I would strongly recommend this, if only to be also able to read the schematic and work out what went wrong if anything does.

One Transformer has not got enough power for the 300B option, sorry.

Depends, if you use AC Filaments the hum will be a little higher. With DC Filaments and due to the added choke filtering in the PSU the hum will be much less.
