You can use the M-Audio Transit or the Edirol UA-1D to convert USB to S/PDIF. The Transit only has Toslink out, but can be modified to have Coax out. I believe the Edirol converts everything to 48 kHz samples, while the Transit passes the native rate.

The Transit works superbly with a PC, but I have heard some anecdotal evidence that with Apple gear, the Edirol is better. Probably S/W drivers etc..
