Often when we look for an alternate word we pick an abbreviation or contraction, not a word that is longer. So why say minty when mint conveys the image?

Same here! Though I'm one of those that can't diagram sentences well either but still have a much better grasp of this language of ours than many now. I also think it's laziness and the spell checker apps, whom are often very wrong themselves to blame.
It annoys me too.

Oddly enough (odd to me, anyway) mistakes in the spoken word don't affect (effect?) me the same way reading them do. I suppose it might if I went to a surgeon who said "This ain't gonna hurt", I might mentally balk a bit, but for the most part I don't hear it because I'm focused on the message.
The written word is another matter.
This must be how people with some degree of fashion sense react when they see me out in public.
