One of the EL 34's in one of my Consonance M800SEs seems slightly "dimmer" for want of a better word.
The tube seems to hold bias....should I be concerned?

Well, the dimmness goes with the tube....I have the perfect solution. Put the tube cages back on, spin vinyl, try to forget I ever noticed the problem.
There is no problem - so no need to worry!
The EL34 are idle biased to around the same point? Think you are good to go.

Jim is correct, USUALLY it is just the way the tube is made, but I would still check further - there is possibility of poor contact in filament circuit.
Swap two tube position, and see if the same tube remains dimmer in another slot. If so, then don't worry. If the problem is related to the particular tube socket, then further troubleshooting is in order.
That tube may have a higher resistance heater causing it to pull less current. The only way to know for sure is to measure the heater voltages.
On the other hand, don't worry about it.
Usually the relative brightness of a given tube is based on how much of the tube's heater is exposed vs. hidden inside the cathode sleeve.
It is nothing to be concerned about at all.
