Is Ethernet or USB preferred for streaming to an Oppo 205? The 205 sits near a mid 2015 Mac Mini that runs Roon core. It recently replaced an ultraRendu with Senore LPS 1.2 and Ayre QB-9 DSD.

How long would the Ethernet cable be? That, and the capability of your wireless router will be a factor.
In this case there is no "right way". Many will prefer Ethernet but which way works best and sounds best to you?
I've been using Ethernet, but I think it's easy to try USB. I think both might be connected with selection in the Oppo 205 menu.

What I dislike is the comparatively crude Oppo UI with my 103. Don't know if the 205's is any better.
I have a 105 and 105D that I haven't used in so long I have no recollection of the GUI. The GUI of the 205 seems completely adequate. I had intended to use a SMS-1 bass manager with the Velodyne HGS-10s, but with the goal of decluttering I've decided to stick with the sub set up menu of the 205.
As you seem to want to try both then please do and experience why ethernet is (or should be) preferable. There are a number of technical reasons for this I believe, including noise from the 5V USB power bus, jitter levels, that the USB input on Oppo 205 is not AFAIK asynchronous etc. However do bear in mind that the USB cable you choose will also have a significant influence on what you hear ranging from (from my experience) virtually unlistenable (my Cannon printer's USB cable) to pretty good. My recommendation for performance v. price is Audioquest Carbon.

PAR, you make a good case for preferring Ethernet. I've been using Ethernet and I think the sound is quite good. My reason for replacing the ultraRendu, LPS 1.2, Ayre QB-9 DSD, and associated cables was to reduce clutter in our living room. The setup is now the Oppo 205 via XLR to a NAD M22 amp that drives a pair of KEF LS50s crossed at 80 Hz to a pair of Velodyne HGS-10s. Following Jon Atkinson's lead, I've used Ethernet to the Ayre QX-5 Roon endpoint in our media room for several years with excellent results.
