They are both quite good, recording-wise. The Parkening is solo guitar, while the Isbin is mostly concertos and other accompanied music.
Parkening Plays Bach was recorded in the late 60s/early 70s, but has no doubt been remastered for some of the re-issues. I listen mostly to the original LP (I'm an analog kinda guy), and it is wonderful.
Isbin is a digital recording from 2003. The sound is really quite nice, but (to me) there's a bit of that "anti-septic" quality of digital. But that's just me - I still listen to and enjoy it frequently.
