Like spinach. I'd be cautious taking too muck Vitamin K, esp if you are on Warfarin of other blood thinners to prevent deep vein thrombosis, heart attacks, or strokes.

Interesting study, IMO.

We'd probably have Spinach as a major ingredient less than once a week. Usually in Spinach pasta with Spirali, Prosciutto, Garlic, a small amount of Chillie, Capsicum, one Onion sauteed, and some Garlic, in Olive Oil, and Parmesan topping.Baby (green) Spinach in green salads once a week or more.
I know I eat well, and healthily.

Well Fenderlover, probably one of the least worries a human can have is a concern over excess Vitamin K intake assuming you are not on blood thinners and told not to take it. I read that there is no known toxicity of vitamin K. A problem with excessive spinach might be because of it's high oxalic acid levels. If you can find any example of anyone in the history of the human race that has harmed themselves from excess vitamin k from eating spinach in large quantities, yumy, I'll give you $1000000. T456

There is some evidence that spinach intake increases the incidence of glaucoma. I don't touch the stuff.
