Higher ceilings are OK but not domed, cathedral or tray ceilings. Not that I have a choice.

I guess I thought that because you always hear about all these wonderful recording sessions that happen in churches.

Those spaces enhance the sound by their characteristic resonances. That is nice for the recording since we do want to hear what the music sounds like in those spaces.
OTOH, adding a new set of different resonances characteristic of the playback room distorts/inflates the sound in an unnatural way.
