There are so many, but I suppose if I had to choose one it would be Simon and Garfunkel's "Sound of Silence."
Follow Ups:

Beautiful and flowing. Sticks in my head often.

"Im Abendrot" from "Vier letzte Lieder" of Richard Strauss.
And a congregational hymn: "I bind unto myself today" from The Hymnal 1982 of the Episcopal Church.
I want the organist to play J. S. Bach's Toccata in F Major and "Schmücke dich, O liebe Seele."That's the trouble with being a church organist.

Actually, I would like the whole first side played, but you said one song.
I want to have myself sitting up like an automaton singing along to Bury Me Not On The Lone Prairie.
No song for me, just the repeated scratching and popping the stylus hitting the end of the run out groove.
The Pie Jesu from the Fauré Requiem.
Actually, I would want the whole Fauré Requiem.

Yes--splendid music that avoids the doom-obsessed nature of so many Requiems.

From Blood Sweat & Tears - "And When I Die".
"Mechanix" by my mentor Rainer Boesch.
Another would be the great Frank Sinatra, "My Way". But there are enough others to fill out an entire funeral.

I'm going to be cremated.
This is if I have enough warning I am finally gonna croak.
Drive out into the great big North West, and wander away.
Lay me down to die under the trees far far away from civilization.
No one to mourn, no one to care.
My boss asked me what was the last song I wanted to hear. I said, the Allman Bros-You Don't Love Me.
The next day I asked if I could change it to Mountain Jam, it lasts longer.
I've had a life that's full, everyone's been good to me
So fire up that fiddle, boys, and give me one last drink
When the sun comes up I will leave without a fight
The world is mine tonight
Happy listening,
Jim

I like the idea of music being played at any funeral. Makes for a nice mix among the eulogies.

But seriously, no funeral for me, just a memorial gathering of family and friends. And I've actually thought about making a compilation disc of meaningful music, at least in my life, to be played at such an event.
At this point all I'm sure of it that it would begin and end with Monk's version of "Abide With Me".
"The piano ain't got no wrong notes." Thelonious Monk
and about 100 others.
Would get boring after a bit, but... I won't care.
"Once this was all Black Plasma and Imagination" -Michael McClure
John Coltrane - "A Love Supreme". The whole album. Nobody leaves until it's over. I know, just one song. Sue me.
sung by Julie Miller or Emmylou Harris
But, I would like to die with the sound of Lucia Micarelli's violin playing in my ear.

Pee Wee's Blues, by Kenny Davern. The version I want is on a record he
made with Howard Alden in the mid 90s, but the linked version isn't too
bad either. Enjoy.

That's a good one. We just to blast that over the soccer field prior to every home game we played. What a nice buildup.
Mine would be Funeral by Lukas Graham.

Given some recent sobering medical news, I've been giving more thought to things like this.
I'm not going to have a funeral, but rather a "celebration" with a lot of friends and family doing a whole lotta eating, music listening, and reminiscing.
I used to want Bowie's "Heroes" to be the first song played to my memory, but now I think I want it to be Parliament's "Give Up The Funk." :)

Personally I just want to live long enough so that they can stick my brain into a Cyberman from Doctor Who. Human 2.0.
I do kind of like the idea of those plants. Put your ashes into the plant and you become a tree.
