Not to sound too much like a shill for the Philadelphia Orchestra, but their latest SACD raises the bar for organ recordings. Polyhymnia has done a remarkable job capture the 7000 piped instrument's sound.The balance between organ and orchestra is also pretty much perfect, so Barber's "Toccata Festiva" and the Saint-Saens are quite spectacular sounding.
Eschenbach's extreme slow and fast tempos, though, will earn him some enemies.

Mine is quite unfavorable for performance of the Saint-Saens. The Barber and Poulenc performances are quite good, however. I agree that the sonics are fantastic. I was very disappointed in the Saint-Saens performance.
