A schematic of the output stage section of the DAC would be greatly helpful. I would guess that the DAC uses the two triodes in each tube (if they are dual triodes; tube type?), one for gain direct coupled to a cathode follower using the second triode. If so, using an output transformer will reduce the gain somewhat, depending on the step down ratio chosen. But otherwise, if the assumptions I've made are correct, the use of the LL1689 or some other line out transformer will work.
