Sound, including the source performance and the ambiance which endows that performance with the characteristics of a particular time and place, comes from all around you at the live event. Surely, you can discern the difference between the sound of a band in a gymnasium vs. on an open field or a piano in a small club vs. a large concert hall. Without that information, you are hearing the ambiance of your listening room which, frankly, is simply wrong.
As for proper playback setup, it has little to do with the "live event" as the captured channel information greatly supplants the acoustics of the listening room. The sad part is that few audiophiles get to hear good surround. It is a circular problem since there are almost no high end salons that can/will demonstrate surround because their clientele consists of people with your attitude.
I have done demonstrations, mostly at home but in 1-2 audio shops, and the response has been overwhelmingly in favor of multichannel, even among those convinced of its folly and those who will still not invest in it.
The lack of wide repertoire is an issue (except in classical music) but that, too, is due to the low awareness of the public.
