What a great weekend meal although traditionally Monday is for red beans.
I cook all my beans in a Dutch oven. First I brown my meet then I sweat my vegetables, add beans and water with some high quality chicken base, cover and put the pot in a 350 oven for about three hours. The beans come out tender, creamy and evenly cooked and no scorching.
