Largest blade size (~4") I can "legally" get away with here, in public (I think it's like 2" in the UK).
Also about the most sophisticated steel formulation (VG-10) I can actually sharpen with my less-than-great skills. It's a good tough steel, and it really does hold an edge, so sharpening isn't required that often. [You could slice up an Al can with it and it would still be sharp.]
