I have no idea who conducted, but in the late-90s and early-00s, I saw two separate shows, Handel's Messiah and his Watermusik, both of which, in my mind, stood out above the other 4 or so concerts I saw at Davies.
Also during this period, the San Francisco Symphony worked with Metallica, on the S&M album. However, that was not recorded at Davies. Rather, that was recorded at the Berkeley Community Theater, which is basically just a high school auditorium.
As far as the neighboring S.F. Opera is concerned, I do hear radio ads on KCBS. I've never had the urge to get all dressed up for the opera (the opening night of the season is where all the rich folk trip over themselves, trying to out-dress each other). Once, while driving by Van Ness, I saw Gavin Newsom and Nancy Pelosi chatting with each other, while waiting to enter the opera house.
Newsom seems poised to succeed Jerry Brown as CA Governor. Should have gotten his autograph when I had the chance!
