From what I hear (haven't checked myself) a mid-engined car is easier to drive quick while a rear-engined 911 is easier to drive fast.
Rear-engined cars give a lot more warning before something goes wrong and then it is easier to catch while mid-engined ones give very little when they are approaching the limits of adhesion.
All that said if I had enough spare cash for a 911 GT3 I'd buy a Cayman GT4 and have it re-bodied by Zagato (might not be enough spare cash but one can dream!).
