High tackles are to force turnovers; players are coached up to go high for a "strip." There really isn't an

easy way to stop a big NFL runner; hit him low, the thunder thighs will knock you out (or the knees will). Hit them high, and their linebacker-sized upper bodies will blow you off.
You see, now, lots of safeties/corners, mostly outweighed by premier backs, come up and try tackling the ankles by "sweep" tackling. That can work if perfectly timed; often, the runner can step/jump over or otherwise avoid the body launched at his lower body.
