There's a lot of hearsay and theresay on this, as well as history and science. Its difficult to establish which is what, and those will be different for any given individual.
Myself, I think a lot of the alarm -- as typical -- is overblown. An entire gluten-free industry has sprung up from overreaction. But there are problems (and correlations) that can't be dismissed.
I stumbled on this article in the New Yorker, which may be helpful. Its lengthy, informative, and well done.
