New grills can't equal the old grills...I seasoned my new smoker, there was no metallic taste (as there would have been if it wasn't coated with oil and had a fire in both the smoker and the fire box) but I could tell there were "subtleties" missing from the ribs last night.Speaking of which, I experimented with Mrs. Dash. I figured it's a good flavored mix of herbs so I wanted to see what the difference would be using my sauce. It was very good. It was terrible in comparison to my rub.
I think it's time to start going to some contests, learn from the big boys and someday soon, enter my ribs into a contest. I really don't think I'm exaggerating or bragging when I say my ribs are the best I've ever tasted.
I'll try some other mixed herb recipes that are marketed, just for the education, but MY GOD! Those ribs last night were stupendous. Wait until you old-time festering festers taste what a REAL smoker can do with some ribs. Not so much better than the big grill, just more consistent.
I gave some of my rub to my next door neighbor, the one with the drop-dead gorgeous daughter. He comes from the Carolinas...I hope he likes the rub.
