I went through the same delimma a couple of years ago. My wife grew up on a farm, and really had never had a cat as a pet.
I went to the local animal shelter and adopted an older cat (saved her from definate extermination). I did have her declawed (like the vest said, better declawed than the alternative!). I think this route was the way to go, because we didn't have to deal with the "wildness" of a kitten, litter box training, etc...
My wife was hesitant at first, but now loves Gracie, who has a habit of curling up in my wife's lap in the evenings--this won her over.
Although cats are pretty self-sufficient, there is still the litter box thing, not to mention the hair everywhere (but I take care of these things--not my wife). I did put a cat door in the door going out to the garage--so no litter box in the house-this helped convince her some.
I'm not sure the differences in breeds, as I have always had mixed breeds--but cats seem to be cats if you know what I mean.
