What does the ohms have to do with the volume of sound produced ?

Short answer: Nothing. Differences in speaker efficiency swamp the differences in loudness due to impedance differences. Also, speaker impedance is usually a nominal value, and the actual impedance value of a speaker often varies wildly with frequency.

As to harm, with tubes you will not harm your amp (though I'd avoid a short). You could instantly blow a transistor amp by shorting, though.
