I believe Richard Modafferi uses Vactrols in his 10B repairs, according to an Audio Classics repair sheet someone posted a while back.
It shouldn't be too complicated to build LED based replacements, and like you said, preferably on a small PCB that could be tucked in the chassis area where the cylindrical optocouplers usually go. Existing chassis holes could be used to secure it, as well.
Sheldon is certainly the right guy for the job.
By the way, the seller of the model 10 on eBay finally sent me the picture of the guts in high resolution!!! Having a blast looking and comparing to the 10B. Optocouplers appear to be identical in this very early (1963 date coded) version!
