Hithere are a couple of ways of doing this, the first is to loop out a bit of the transformer wire at the point the tap is required. This is usually laid across the existing winding, and held in with a little bit of tape, something like the stuff used for the inter layer insulation. The PD across the winding and the tap is usually minimal.
The second is to make sure that where the tap is, is actually a full layer on the transformer, so that there is a seperate start and finish to the section. By doing this for all taps, it means that you can come up with various combinations of windings to allow impedance matching.
