Ohm's law says that because the grid of an A1 stage represents an infinite impedance (for practical purposes), current flow is not possible. I know it's tempting to look at a transformer as a voltage transformation device, but magnetic induction and proper transformer action require current flow. What you hear when you use a transformer without a resistive load is anyone's guess, but it's likely to include numerous anomalies that don't accurately represent the original signal.
