Holy crap, an ungapped interstage transformer is not a wise choice for the 6C45PI. Generally, a fair amount of driver current is used with the 6C45PI (I like 10-25mA).
Don't be bothered by the coupling cap. It serves the same purpose as the power supply cap right behind the primary on your series feed interstage transformer. Would you rather listen to a 6.8uF film cap, or a 100uF high voltage electrolytic?
The S8 with the lower step-down ratio may work for you, just be sure that you have adequate bias voltage on the 6C45 to result in being able to apply sufficient signal to the grid of the 6C45 to drive the finals properly.
(The 6C45 is a good choice IMO for driving an IT)
