A larger wattage rating typically will not affect sound in an audio amp. There could be a few exceptions.
The ohms law suggested above is the proper way to measure the dissipation and 2x id good.
Also it's possible some cathode resistors on power tubes may be intentionally undersized somewhat for wattage. This is so they act as a fuse when the tube developes a short. Otherwise the OPT will become a fuse. You don't want that!
