After researching the cables suggested here, I realized that the low capacitance variety were out of my price range for this project. One brand rang up at about $120-150 for two mono cables. So, I went out this evening and picked up 50' of RG-58U. It runs about 100 pF per meter, so the 3dB frequency at 25' with a 10K source will be over 20kHz, and more than 200kHz with a 1K source. Given that the organ probably doesn't produce any harmonic energy over 10kHz or so, this is more than good enough. Total cost: ~$20 plus connectors from my junkbox.
Eli, your caveat would be right on if this were hi-fi. In fact, I would never run a line-level cable so long in a high end audio system.
