I'm all for minimizing the number of stages in a circuit, especially when it can improve performance. But there are many cases where two cascaded lower-gain stages offer less distortion than a single higher gain stage. Especially if you need any appreciable output voltage swing, or current drive. I recall some old record player schematics using a single pentode stage from phono to speaker, for use with ceramic cartridges -- I'm pretty sure that can't compete with a typical multi-stage phono / line / power amp design, in measurement or sound.
Regarding distortion cancellation, it doesn't work for perfect devices, since 0+0=0. But 1-0.8=0.2 is a trick that's been used for 80+years in amplifier design.
