interstage tranny / load resistor question

Hi all. Newbie here!
I recently switched from capacitor coupled to transformer coupling between my 6sn7/2a3 SET.
I tore out the plate load resistor on the 6sn7, the coupling cap, and the load resistor on the 2a3's grid.
Really like what I hear.

My question concerns schematics I have seen with an IT and grid load resistor on the output tube.
Why do this? What benefits are there to this. I plan on trying it anyway but would like to know "what" I'm doing. ;-)

My amp is a diy completed with the help of a local retired EE based on il triodino, schematic drawn on paper.
