Cheap transformers are worse than equivalent-price capacitors.
Good transformers are expensive and much heavier than equivalent-quality capacitors.
Peter's comments on using feedback around transformers are also valid.
A good transformer-coupled circuit with heavy transformers is hard to beat otherwise.
There is at least one Italian-made amplifier that has no resistors or capacitors whatsoever in the signal chain, coupling tube plates to tube grids with only transformers, and using a variable-tap transformer for the gain control (I can't afford it, though). This is a valid design approach for triodes, but probably not useful for pentodes.
