cat5 offers only about 45-50 db of noise immunity when correctly terminated ie 110ohms both ends.
given its frequency cabablity of 500+Mhz sounds like your picking up EMI somewhere. Check the cable runs are clear of anything that could induce hum.
Are you causing earth loops to be formed by connecting the kit somehow ?
Has a pair been misterminated (swopped round on one end)somewhere?
You could try placing say a 1000pf cap on one of the ends to ground and see what happens.
