you are neglecting the need for phase inversion of one of the two tubes required for the distortion "cancellation". In two consecutive stages the tubes are out of phase with each other so some part of the even harmonics "cancel". The same thing happens in a PP output where the two halves are out of phase wiht each other but in parallel SE, the two tubes are in phase with each other so no "cancellation" will occur.
