EI core transformers are bigger than C core transformers of the same rating. (Just image google EI and C core.)

Bigger is not better even if same type of transformer. Too big and you sacrifice highs, too small and you sacrifice lows. You want the appropriate size. For an 8 watt 300B you might want a transformer rated 20 watts @ 30Hz.
