I too think buying lo-noise, lo-microfonics tubes from Tube Depot is a good idea. I know nothing about the sounds of currently manufactured 'N7s except for the Chines tubes my ASL Hurricanes and 1006/845s were supplied with, which sounded a bit bright and edgy to me, and these Russian tubes...
...which sounded about the same. I'm no GEA, but I seem to be particularly sensitive, over time, to edginess/harshness, and these 2 tubes were NOT listenable to me, long-term. I've tried MANY old 'N7s including Tung-Sol and many other angled-T-plates in my journey, and none of them have the overall balance of goodness, warmth, nonedginess, etc., as the RPs. One CAN find them around...

BTW these... http://www.pentalaboratories.com/Product.aspx?dept_id=5020&pf_id=6SN7GT& ...look like the Chinese 'N7s I had, but that doesn't mean they ARE the same.
This new one you mentioned... http://thetubestore.com/tungsol6sn7.html ...appears worth trying for a relatively low price. FWIW, I would NOT opt for matched sections.
