That's a point alright...
How about just starting with individual pots? You can use stereo ones for the balanced channels. Then once you figure out where you want them you could replace them with metal film resistors for a better noise figure.
It's not like you are going to be using them in real time, if I understand correctly you just want to get the system gain balanced so that the digital volume controls are reasonably close to maximum, say -10 dB when the sound level is where you usually listen so that it won't wipe out your speakers, ears and amps when the computer crashes or something else goes astray.
